Our Organic Process

For obtaining organic extra virgin olive oil there are strict rules dictated by the normative, which pay particular attention to the phases of cultivation, harvesting, transport, pressing and conservation.

LaRiservaBio pays highest attention to the rules of organic farming governed by European Regulation (EC) 834/07 and its amendments to guarantee great taste and a product free from artificial additives.

A Family Business

LaRiservaBio is a family business run by the owner Ms. De Rossi Anna Maria and her husband who is an agronomist and therefore ensures the necessary technical competence and oversight of the production process.

Olive Oil Storage Silos

The production chain is entirely oriented towards obtaining a pure product, the olives, grown on our farm organically, are harvested early, from the beginning of October. We bring daily our harvest to the olive oil mill and it is afterwards pressed within 12 hours with a cold extraction system.

Our farm includes about 50 hectares of hilly land, where olive cultivation is predominant, especially the Canino variety, which gives the oil exceptional organoleptic qualities: low acidity, high polyphenol content, intense fruity aroma, long shelf life.

Our extra virgin olive oil is carefully stored in stainless steel tanks, at a controlled temperature and under a nitrogen atmosphere; then packaged immediately before being sold.
